It is supposedly generally served with a mountain of very fine, crisp potato straws, for which I must go looking, but rice is an acceptable simpler alternative.\n<\/p>\n<div class=\"recipePlanning\">\n<h2 class=\"recipe\">Planning<\/h2>\n<table class=\"recipeTiming\">\n<tbody>\n<tr>\n<td class=\"recipeTimingTitle\">serves:<\/td>\n<td class=\"recipeTimingData\">\n4\n<\/td>\n<\/tr>\n<tr>\n<td class=\"recipeTimingTitle\">preparation time:<\/td>\n<td class=\"recipeTimingData\">\n20 mins\n<\/td>\n<\/tr>\n<tr>\n<td class=\"recipeTimingTitle\">cooking time:<\/td>\n<td class=\"recipeTimingData\">\n40 mins\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<\/div>\n<div class=\"recipeIngredients\">\n<h2 class=\"recipe\">Ingredients<\/h2>\n<ul class=\"ingredients\">\n<li>1 whole chicken, cut into 8 serving pieces<\/li>\n<li>12 dried apricots<\/li>\n<li>3 tablespoons olive or rapeseed oil <\/li>\n<li>2 cinnamon sticks<\/li>\n<li>\u00bd teaspoon whole cumin seeds<\/li>\n<li>2 medium onions, cut into fine half-rings<\/li>\n<li>3 teaspoons peeled and finely grated fresh ginger<\/li>\n<li>1 tablespoon tomato pur\u00e9e<\/li>\n<li>1\u00bd tablespoons granulated sugar<\/li>\n<li>2 tablespoons red wine vinegar<\/li>\n<li>1 teaspoon garam masala<\/li>\n<li>\u00bd-\u00be teaspoon cayenne pepper<\/li>\n<li>Salt &#038; pepper<\/li>\n<\/ul>\n<\/div>\n<div class=\"recipeMethod\">\n<h2 class=\"recipe\">Method<\/h2>\n<p class=\"bodytext\">\nPat the chicken pieces on all sides with \u00bd teaspoon salt and generous amounts of black pepper. Set the chicken aside.\n<\/p>\n<p class=\"bodytext\">\nPut the apricots in a small pan with 250 ml\/8 fl oz water and bring to the boil. Lower the heat and gently simmer for 15 minutes or until the apricots have softened but remain firm enough to be cooked again later. Leave them in their liquid.\n<\/p>\n<p class=\"bodytext\">\nPut the oil in a large pan and set over a medium-high heat. When hot, put in the cinnamon sticks and cumin and let it sizzle for 10 seconds. In the spicey oil, brown the chicken pieces on all sides ( do it in two batches if necessary to avoid over-crowding the pan). Reserve the chicken in a bowl.\n<\/p>\n<p class=\"bodytext\">\nAdd the onions to the saut\u00e9 pan. Stir and fry until the onions are brown at the edges. Add the ginger and stir for a few seconds. Add the tomato pur\u00e9e and stir again. Now return the chicken and all its accumulated juices to the pan, along with 350 ml\/12 fl oz water and 1 teaspoon salt. Cover and bring to the simmer. Lower the heat and cook gently for 15 minutes, turning the chicken once during this time.\n<\/p>\n<p class=\"bodytext\">\nRemove the cover and add the sugar, vinegar, apricots with their cooking liquid, garam masala and cayenne pepper.
