Since most commentators say that there are as many variations as there are cooks in Thailand, I will deliberately avoid the use of the word &#8220;classic&#8221;.<\/p>\n<div class=\"recipePlanning\">\n<h2 class=\"recipe\">Planning<\/h2>\n<table class=\"recipeTiming\">\n<tr>\n<td class=\"recipeTimingTitle\">serves:<\/td>\n<td class=\"recipeTimingData\">4<\/td>\n<\/tr>\n<tr>\n<td class=\"recipeTimingTitle\">preparation time:<\/td>\n<td class=\"recipeTimingData\">25 mins<\/td>\n<\/tr>\n<tr>\n<td class=\"recipeTimingTitle\">cooking time:<\/td>\n<td class=\"recipeTimingData\">10 mins<\/td>\n<\/tr>\n<\/table>\n<\/div>\n<div class=\"recipeIngredients\">\n<h2 class=\"recipe\">Ingredients<\/h2>\n<ul class=\"ingredients\">\n<li>225 g dried rice noodles<\/li>\n<li>450 g raw prawns, shelled &amp; de-veined<\/li>\n<li>2 tbs groundnut oil<\/li>\n<li>4 cloves garlic, finely chopped<\/li>\n<li>4 shallots, finely sliced<\/li>\n<li>2 fresh Thai chillies, deseeded &amp; chopped<\/li>\n<li>175 g fresh beansprouts<\/li>\n<li>2 eggs, beaten<\/li>\n<li>1 tbs light soy sauce<\/li>\n<li>1 tbs lime juice<\/li>\n<li>2 tbs Thai fish sauce (nam pla)<\/li>\n<li>1 tsp sugar<\/li>\n<li>freshly ground black pepper<\/li>\n<li>1 lime, cut into wedges<\/li>\n<li>3 tbs fresh coriander, chopped<\/li>\n<li>4 spring onions, sliced diagonally<\/li>\n<li>3 tbs roasted peanuts, coarsely chopped<\/li>\n<li>1 tsp dried chilli flakes<\/li>\n<\/ul>\n<\/div>\n<div class=\"recipeMethod\">\n<h2 class=\"recipe\">Method<\/h2>\n<p class=\"bodytext\"> Soak the rice noodles in warm water for 20 mins, then drain and set aside.<\/p>\n<p class=\"bodytext\"> Heat the oil in a wok over high heat and, when the oil smokes a little, stir-fry the prawns for 2 mins. Remove the prawns with a slotted spoon and set aside.<\/p>\n<p class=\"bodytext\"> Back to the wok, add the garlic, shallots and chillies, and stir-fry for 1 minute. Now add the noodles and stir-fry for another minute. Now add the beansprouts, eggs, soy sauce, lime juice, fish sauce, sugar and some ground black pepper and continue to stir-fry for 3 mins.
